You’ll remember Jose Luis Zapata if he has ever been your driver on one of our tours. He is of course, like so many in the tourism industry, out of work and has found something else to do, to make some extra cash and maybe bring some bread home as well.
The traditional Yucatan bakery featured a giant wood-fired oven, which you will see here once the video is up. The baked goods would be distributed by delivery men on tricycles who would shout ‘panadero’ or have some other sonic trick to get you up and out of your hammock and to the front door to get some bread for your late afternoon or evening meal. This tradition, along with the wood-fired ovens is fast becoming a thing of the past.
